Anyone who knows me knows that cooking is definitely NOT my forte. However, since I've been off work for the past 6 months and moved out to BFE, I've had to take on the challenge of learning how. I'm happy to say that I am a cook in the making and have actually found a certain fun in cooking. A once dreaded occasion has become something that I somewhat enjoy and I think Shane would have agree, something I've gotten much better at doing. The beef in these chimichangas is so good. It has the most amazing flavor. I would say that it is better than any beef I've ever eaten at Mexican restaurants. It is really THAT good. I hope you enjoy these as much as we did!
